Spicy spaghetti squash with basil and garlic veggies

Recipe for 1 squash 

  • 1 spaghetti squash sliced length wise and seeded
  • 2 garlic cloves minced
  • 1/4 C diced yellow onion
  • 2 handfuls of spinach
  • 1/2 bell pepper diced
  • 1 zucchini chopped
  • 2 tbsp of ghee ( clarified butter) its easier to digest for lactose intolehrant people
  • 1 drop lemon essential oil 
  • 3-4 basil leaves chopped
  • 2 roma tomatoes diced
  • Balsamic vinegar (optional)
  • fresh parsley 
  • salt/pepper
  • chili flakes

Preheat oven to 400 F, place squash face down in a baking dish. Bake for 35 - 45 min. In a saucepan simmer butter, onions and garlic for a few minutes. Then add zucchini, bell pepper and basil, cook additional  3-5 minutes. Add your spinach, lemon, chili flakes and season with salt/pepper. Before serving drizzle balsamic vinegar and top with tomatoes and parsley.
